Ingredients:
- 0.75 cup buckwheat flour
- 1 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup sugar
- 0.5 cup milk
- 2 tablespoons of oil
- 0.25 cup of applesauce
- 1 tablespoon of honey
- 1 teaspoon vanilla
- 1 large eggs
- 0.25 cup chocolate chunks
Method
- Preheat the oven to 190 degrees
- Mix all the dry ingredients in a large bowl
- Mix all the wet ingredients in a small bowl, then add them to the dry mix and combine until smooth. As with all gluten free recipes there’s no risk of overmixing the batter
- Distribute into liners, if using chocolate chunks do that in two or more stages alternating batter with a couple of pieces of chocolate
- Bake for about 20-25 minutes.
