Korean Drug Eggs

The unusual name is a literal translation of Mayak Gyeran. Essentially eggs marinated in soy sauce. Great for a quick lunch with warm rico or as an addition to ramen.

Korean drug eggs

Ingredients:

  • 10 eggs
  • 0.5 cup of soy sauce
  • 0.25 cup of water
  • 3 tablespoons of sugar
  • 1 tablespoon of sesame oil
  • 2 scallions, green parts, chopped
  • 3 garlic cloves, crushed
  • 1-2 green chilli peppers, long variety – spice level will affect the outcome, choose as desired
  • 2 teaspoons of chilli flakes, preferably Gochugaru
  • 2 tablespoons of toasted sesame seeds

Method,

  • boil water, once boiling gently add the eggs, cover and leave on minmal heat for at least 7 minutes or longer. At 7 minutes time you’ll get the whites set while the yolk will have still slightly moist centre. It’s vital to drop them into boiling water as it’ll make peeling easier
  • Peel the eggs carefully, at 7 minutes time they can be a bit delicate. Place them in a bowl
  • Combine all marinade ingredients and pour it over the eggs
  • Leave to marinate for at least three hours, preferably overnight. They’ll keep in the fridge for up to a week.
