Andrut

This is a fairly old recipe. My mom used to make it, at least in the 1908s, but when I served it to other people, they mentioned great-grandmothers preparing it. It’s been a ‘show-off’ thing in the socialist years in Poland.

Andrut

This was probably due to the majority of ingredients having long shelf lives rather than relying on a steady supply of goods.

Ingredients:

  • 250 grams of butter
  • 1/3 cup of milk
  • 3 tablespoon of cocoa powder
  • 1 cup of sugar
  • 1 cup of chopped walnuts
  • 100 grams of raisins
  • 2 cups of powdered milk
  • 2 crushed wafers
  • shredded coconut (optional)
  • chopped gummi bears or similar (optional)
  • dried, candied fruit (optional)
  • two packs of waters (picture at the bottom of the recipe)

Method:

  • melt the butter, add all ingredients and mix until combined. If using any gelatine based add-ons wait until it all cools down, otherwise it’ll melt. It will still taste okay thoug
  • Spread a one-finger thick layer on a wafer and cover with another. Set aside and cover with something heavy until it seats. Repeat until all the wafers are used up

Notes:

  • I nearly always double up the recipe and use up two packs of wafers. Below is a picture of the wafers used, september 2024
  • the ‘spreading’ looks roughly as below. I do plan to work on a better method of ensuring it’s all filled, probably with an aid of a spring cake form
  • you definitely want to press it down when it’s etting. I typically use some heavy, thick books
  • all the ingredients are typically avaialble in Polish shops, othrwise powdered milk can be hard to get, as well as this type of wafers
