Rice noodles with pork and sichuanese peanut sauce

Alright, this recipe isn’t original – I just came up with it inspired by a wave of TikTok videos on peanut sauce. It bears only a passing resemblance to what I watched, and I just improvised it based on years of cooking Sichuanese food.

Rice noodles with pork and peanut sauce

Ingredients:

Pork

  • 1 packet rice noodles, any variety
  • 500g minced pork
  • 3 tablespoons of chopped garlic
  • equivalent amount of ginger
  • 2-3 tablespoons of dark soy sauce
  • pinch of salt
  • one cucumber, sliced into strips
  • 1-2 long, red bell peppers, sliced into strips
  • 1 small onion
  • oil

Sauce

  • 3 tablespoons peanut butter, smooth
  • 1 teaspoon sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon chopped garlic
  • 3 teaspoons white sesame seeds
  • 1-1.5 teaspoon chilli flakes
  • 1-2 teaspoons sichuanese pepper, crushed in mortar & pestle
  • dash of water

Method:

Pork

  • cook rice noodles as instructed on the package
  • in a frying pan heat oil, add ginger and garlic and once fragrant – add the onion
  • Add pork and fry until it changes colour, add dark soy sauce and then tip in the vegetables
  • Season with salt and fry until the vegetables soften, but retain some texture

Sauce:

  • mix together sesame, crushed sichuanese pepper and sesame in a small container
  • heat about three tablesoons of oil and fry the garlic briefly, then add the ingredients above and fry together, set aside
  • in a bowl mix toghether peanut butter, soy sauce and sugar, once combined add the dry ingredients
  • adjust the consitency with water

Serve the pasta, mixed with the pork and generous helpings of the sauce.
